Beets are one of my favorite fall vegetables; not just for their gorgeous color, but for their powerful gut and liver benefits. This shredded raw beet salad is crisp, vibrant, and tossed in a simple citrusy dressing that makes it the perfect side for any meal.

Ingredients (Serves 4)

2 medium beets, peeled and shredded

1 medium carrot, peeled and shredded

2 tbsp fresh parsley, chopped

2 tbsp olive oil

Juice of 1 lemon (or 2 tbsp apple cider vinegar)

1 tsp honey or maple syrup

Sea salt & pepper, to taste
Instructions

In a large bowl, combine shredded beets, shredded carrot, and parsley.

In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper.

Pour dressing over the beet mixture and toss until evenly coated.

Chill for 10–15 minutes before serving to let the flavors meld.
