Instead of tortillas, we’re going bowl-style with a base of sautéed cauliflower rice and shredded greens. Ground beef or turkey gets seasoned with chili powder, cumin, and garlic for a quick and flavorful taco filling. Then comes the fun part—layering on creamy avocado, fresh cherry tomatoes, red onion, and a generous drizzle of that silky chipotle sauce made from almond or cashew butter.

For the Taco Meat (Serves 2–3):
- 1 lb ground beef or ground turkey
- 1 tbsp olive oil (if using lean meat)
- 1 tsp chili powder
- ½ tsp cumin
- ½ tsp paprika
- ½ tsp garlic powder
- ¼ tsp salt + pepper
- Optional: splash of lime juice
For the Bowl Base & Toppings:
- 2 cups cauliflower rice (sautéed or steamed)
- 1 cup shredded romaine or mixed greens
- ½ avocado, sliced
- ¼ cup cherry tomatoes, halved
- ¼ cup red onion, thinly sliced
- Optional: jalapeño slices, fresh cilantro, lime wedges
Creamy Chipotle Sauce (Paleo-Friendly)
- ¼ cup cashew butter or almond butter
- 1 tbsp lemon juice
- 1–2 tsp chipotle powder or ½ chipotle in adobo (check ingredients for paleo compliance!)
- 1 tbsp olive oil
- 2–4 tbsp water to thin
- Pinch of salt
Instructions: Blend or whisk all ingredients until smooth and creamy. Adjust spice and consistency to your liking. Drizzle away!
Assembly:
- Cook the taco meat in a skillet with oil and spices. Set aside.
- Cook or steam cauliflower rice and layer it in your bowl.
- Add greens, taco meat, veggies, and avocado.
- Drizzle that dreamy chipotle sauce on top.
- Top with lime and cilantro.
