Recipe: Paleo Chicken and Cauli Rice Bowl with Creamy Avocado Herb Sauce

Ingredients (Serves 2):

For the Chicken:

  • 2 boneless skinless chicken breasts or thighs
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For the Cauli Rice:

  • 2 cups cauliflower rice
  • 1 tbsp coconut oil
  • 1 clove garlic, minced
  • Pinch of salt & pepper

Toppings (choose your faves):

  • 1/2 avocado, sliced
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup cucumber, diced
  • Fresh cilantro or parsley
  • Lemon wedge for squeezing

Creamy Avocado Herb Sauce:

  • 1/2 ripe avocado
  • Juice of 1/2 a lemon
  • 1 small clove garlic
  • 2 tbsp olive oil
  • 2–3 tbsp water (to thin)
  • Handful of fresh herbs (parsley or cilantro = chef’s kiss)
  • Salt & pepper to taste

Instructions:

  1. Cook the Chicken: Coat chicken with oil and spices. Grill or pan-fry over medium heat for 5–7 minutes per side, or until cooked through. Let rest before slicing.
  2. Sauté the Cauli Rice: Heat coconut oil in a skillet over medium heat. Add garlic and cauliflower rice. Sauté for 5–6 minutes, stirring occasionally, until tender. Season with salt and pepper.
  3. Make the Sauce: Blend all ingredients until smooth, adding water gradually to reach desired consistency.
  4. Assemble the Bowl: Add cauliflower rice to the bottom of each bowl, top with sliced chicken, veggies, and herbs. Drizzle with avocado herb sauce and finish with a squeeze of lemon.
