One-Pot Lemon Chicken and Rice

This is one of my go-to easy dinners when digestion needs supports but decision fatigue is high.

One-Pot Lemon Chicken & Rice
Ingredients

1 lb chicken thighs or breasts
-
1 tbsp olive oil
-
1 small onion, diced
-
2 cloves garlic, minced
-
1 cup white jasmine or basmati rice
-
2½ cups chicken bone broth
-
Juice of 1 lemon
-
Sea salt and pepper
-
Optional: fresh parsley or dill
Instructions

Heat olive oil in a large pot over medium heat.

Season chicken with salt and pepper and lightly brown on both sides. Remove and set aside.

Add onion and garlic to the pot and sauté 3–4 minutes.

Stir in rice and bone broth. Bring to a gentle boil.

Nestle chicken back into the pot, cover, and reduce heat to low.

Simmer 18–20 minutes, until rice is tender and chicken is cooked through.

Finish with lemon juice and herbs before serving.
