Maple-Mustard Chicken Bites (High-Protein, Gut-Friendly Appetizer)

If you want an appetizer that feels festive, tastes incredible, and keeps your blood sugar steady, these Maple-Mustard Chicken Bites are a guaranteed hit.

They’re tender, sweet, savory, and perfectly caramelized and unlike traditional party bites, they’re full of clean protein and anti-inflammatory ingredients that actually support your metabolism instead of spiking it.

Even better? They’re wildly simple to make, naturally gluten- and dairy-free, and serve beautifully with toothpicks for holiday gatherings, game nights, or healthy meal prep.

Ingredients (Serves 4–6)

  • 1 lb chicken breast, cut into 1-inch cubes

  • 1 tbsp olive oil

  • 1 tbsp Dijon mustard

  • 1 tbsp pure maple syrup

  • 1 tbsp coconut aminos

  • Sea salt and black pepper, to taste

  • Fresh chopped herbs for serving (optional — parsley or chives work best)

Instructions

  1. Preheat the oven
Preheat to 400°F (200°C) and line a baking sheet with parchment paper.

  2. Make the glaze
In a small bowl, whisk together Dijon mustard, maple syrup, and coconut aminos until smooth.

  3. Prep the chicken
Toss chicken cubes with olive oil, sea salt, and pepper.
Spread evenly on the baking sheet.

  4. Add the glaze
Drizzle the maple-mustard mixture over the chicken and toss gently to coat.

  5. Bake
Bake 15–18 minutes, until chicken is cooked through and edges are slightly caramelized.

  6. Serve
Transfer to a platter, sprinkle with fresh herbs, and serve with toothpicks.

Tips & Variations

  • Swap chicken breast for chicken thighs for a juicier option.

  • Add a pinch of smoked paprika to the glaze for a smoky twist.

  • Make it a meal by serving over quinoa with roasted veggies.

  • For extra caramelization, broil the chicken for 1–2 minutes at the end.

Enjoy!
