Ingredients (Serves 6)
- 1 lb ground turkey
- 1 tbsp olive oil or avocado oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 2 cups bone broth
- 1 (14 oz) can crushed tomatoes
- 1 tbsp chili powder
- 1 tsp cumin
- Sea salt & pepper to taste
Instructions
- Heat oil in a large pot over medium heat. Add onion and cook until translucent.
- Stir in garlic and bell pepper; cook 2–3 minutes.
- Add turkey and cook until browned.
- Stir in zucchini, chili powder, cumin, salt, and pepper.
- Add bone broth and tomatoes; bring to a simmer.
- Simmer for 20–25 minutes, stirring occasionally. Serve warm.
Tips & Variations
- Add spinach or kale during the last 5 minutes for extra greens.
- Swap turkey for ground chicken or beef.
