Recipe: Ground Turkey Tacos in Lettuce Wraps with Guacamole + Pineapple Salsa
Ingredients (Serves 2–3):
For the Turkey Filling:
- 1 lb ground turkey
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- Salt & pepper to taste
- Optional: splash of lime juice for brightness
For the Guacamole:
- 1 ripe avocado
- Juice of 1/2 a lime
- 1 tbsp red onion, finely chopped
- 1 tbsp cilantro, chopped
- Salt to taste
For the Spicy Pineapple Salsa:
- 1/2 cup pineapple, finely diced
- 1 tbsp red onion, chopped
- 1 tbsp cilantro, chopped
- 1/2 jalapeño, minced
- Juice of 1/2 a lime
For Serving:
- Butter lettuce leaves or romaine hearts
- Optional toppings: diced tomato, extra cilantro, jalapeños, or hot sauce
Instructions:
- Cook the Turkey: Heat oil in a skillet over medium heat. Add turkey and break it up. Stir in chili powder, paprika, cumin, garlic powder, salt, and pepper. Cook 6–8 minutes, until browned and cooked through. Finish with a splash of lime juice.
- Make the Guacamole: Mash avocado with lime juice, red onion, cilantro, and salt.
