Grain-Free Stuffing with Veggies & Herbs

Stuffing is one of those Thanksgiving dishes that makes the holiday table complete. The problem? Traditional stuffing is loaded with bread, butter, and sometimes questionable ingredients that can leave you feeling bloated and sluggish.

This Grain-Free Stuffing with Veggies & Herbs has all the flavor and comfort of classic stuffing but with nourishing ingredients that keep your gut happy. It’s hearty, savory, and guaranteed to please even the traditionalists at your table.

Why This Recipe Works

  • Grain-Free & Gut-Friendly: Uses cauliflower rice instead of bread to keep digestion light.

  • Loaded with Veggies: Fiber supports healthy digestion and blood sugar balance.

  • Classic Flavors: Rosemary, sage, and thyme bring that comforting Thanksgiving aroma.

  • Flexible: Can be made vegan with veggie broth or more protein-rich with bone broth.

Ingredients (Serves 6–8)

  • 1 large head cauliflower, riced (about 4 cups)

  • 2 tbsp olive oil or avocado oil

  • 1 large onion, diced

  • 3 celery stalks, diced

  • 2 carrots, diced

  • 8 oz mushrooms, chopped

  • 3 garlic cloves, minced

  • 1 tsp sea salt (adjust to taste)

  • 1 tsp fresh sage, finely chopped (or ½ tsp dried)

  • ½ cup bone broth or veggie broth

  • Optional: ½ cup chopped pecans or walnuts for crunch

  • Optional garnish: fresh parsley

Instructions

  1. Heat olive oil in a large skillet over medium heat.

  2. Add onion, celery, and carrots; sauté for 5–6 minutes until softened.

  3. Stir in mushrooms and garlic; cook another 3–4 minutes until mushrooms release their liquid.

  4. Add riced cauliflower and season with salt, pepper, rosemary, thyme, and sage. Stir to combine.

  5. Pour in broth and cook until the cauliflower is tender and most of the liquid is absorbed (about 7–10 minutes).
