Recipe: Frozen Berry Coconut Water Popsicles

Ingredients (makes ~10 mini pops):

  • 1 cup mixed berries (blueberries, raspberries & chopped strawberries work best)
  • 1½ cups coconut water (unsweetened)
  • Juice of ½ lime
  • 1 tsp honey or maple syrup (optional)
  • A few fresh mint leaves, finely chopped

Instructions:

  1. In a bowl, mix the berries, lime juice, chopped mint, and sweetener (if using).
  2. Spoon the berry mixture evenly into ice cube trays.
  3. Pour coconut water over the berries to fill each cube.
  4. Cover tray tightly with foil. Poke small holes and insert toothpicks or mini skewers.
  5. Freeze for at least 4 hours or overnight.
