Dark Chocolate Bark with Pumpkin Seeds & Sea Salt
Halloween is often viewed as the official kickoff to the holiday "sugar season" — a two-month stretch of candy, baked goods, and indulgent meals that can leave you feeling sluggish, bloated, and entirely off your baseline by the time January rolls around.
In my practice, I see a lot of anxiety around this time of year. People feel they have to choose between strict restriction (and feeling deprived) or complete indulgence (and dealing with the physical fallout).
I want to offer a different approach: Abundance over restriction.
You don't have to skip the treats. You just need to upgrade them. When you create treats using high-quality, nutrient-dense ingredients, you satisfy the craving without triggering the inflammatory cascade that comes from refined sugar, artificial dyes, and processed dairy.
This Dark Chocolate Bark with Pumpkin Seeds & Sea Salt is the perfect example. It is deeply rich, satisfyingly crunchy, and takes exactly 15 minutes of hands-on time to make. It feels festive and indulgent, but it is actively supporting your health.

Why This Treat Works for Your Body
Dark Chocolate (70% Cacao or Higher)
High-quality dark chocolate is a functional food. It is incredibly rich in polyphenols and flavanols — antioxidants that have been shown to lower blood pressure, improve blood flow, and reduce systemic inflammation. Furthermore, the fiber in dark chocolate acts as a prebiotic, feeding the beneficial bacteria in your gut. (Just ensure you choose a brand that is dairy-free and sweetened with unrefined cane sugar or coconut sugar).
Pumpkin Seeds (Pepitas)
Pumpkin seeds are one of the best plant-based sources of zinc, a mineral that is absolutely critical for immune function. They are also rich in magnesium, which supports healthy blood sugar regulation and helps calm the nervous system — a welcome benefit during the busy holiday season.
Flaky Sea Salt
Beyond enhancing the flavor of the chocolate, high-quality sea salt provides trace minerals and electrolytes that support cellular hydration.

Gluten-Free · Dairy-Free · Vegan · Paleo-Friendly
Ingredients
- 10 oz high-quality dark chocolate chips or chopped bars (70% cacao or higher, dairy-free)
- 1 teaspoon coconut oil (helps the chocolate melt smoothly and gives it a nice sheen)
- ½ cup raw pumpkin seeds (pepitas)
- ¼ cup dried cranberries or goji berries (look for apple-juice sweetened if possible)
- 1 teaspoon flaky sea salt (like Maldon)
- Optional additions: A sprinkle of hemp hearts, a dash of cinnamon, or a few chopped pecans
Instructions
1.Toast the pumpkin seeds: Place a small, dry skillet over medium heat. Add the pumpkin seeds and toast for 3–5 minutes, shaking the pan frequently, until they are fragrant and begin to lightly pop. Remove from heat and let cool.
2.Prepare your workspace: Line a large baking sheet with parchment paper or a silicone baking mat.
3.Melt the chocolate: Create a double boiler by placing a heat-safe glass or metal bowl over a small saucepan of simmering water (ensure the bottom of the bowl does not touch the water). Add the dark chocolate and the coconut oil to the bowl. Stir continuously until the chocolate is completely melted, glossy, and smooth. (Alternatively, you can melt the chocolate in the microwave in 30-second increments, stirring well after each, until smooth).
4.Spread the chocolate: Pour the melted chocolate onto the prepared baking sheet. Use a spatula to spread it into an even layer, about ¼-inch thick. It doesn't need to be a perfect rectangle; organic, wavy edges look beautiful.
5.Add the toppings: While the chocolate is still warm and wet, evenly sprinkle the toasted pumpkin seeds and dried cranberries (or goji berries) over the surface. Gently press the toppings down just a bit so they adhere to the chocolate.
6.Finish with salt: Sprinkle the flaky sea salt evenly over the top.
7.Chill: Place the baking sheet in the refrigerator for 30–45 minutes, or until the chocolate is completely firm and set.
8.Break and serve: Once set, remove from the fridge and use your hands to break the bark into irregular, rustic pieces.

Storage Tips
Store the chocolate bark in an airtight container in the refrigerator for up to 2 weeks (though it rarely lasts that long!). You can also store it at cool room temperature, provided your kitchen isn't too warm.
Navigating the holidays doesn't have to mean compromising your health goals. By making treats that are rich in antioxidants, healthy fats, and functional minerals, you can enjoy the season fully without the physical hangover.
Make a batch of this bark to keep in the fridge for when the sweet craving hits, or wrap it up in a beautiful jar to bring as a host gift to your next fall gathering.
Enjoy the holiday, enjoy the treats, and stay well.
