My dairy-free tomato basil soup is the holy grail of disease-fighting properties!  This is mostly due to the high level of carotenoids (the sexy red color), and the high levels of flavonoids (antioxidants aka street cleaners) working as a team! INGREDIENTS

20 Roma Tomatoes

1 Large Red Onion (Slivered)

1 Head of Garlic ( Shells Removed)

1/3 cup of Nutritional Yeast

1/2 Tbsp of Lakanto Monkfruit Sweetener

1 12oz can of Tomato Paste

1 1/2 cups of Vegetable Broth

1 cup of Fresh Basil Chopped

2 Tablespoons of Ground Pepper

1/2 cup of Avocado Oil

1/4 cup Celtic Sea Salt

1/2 Can Coconut Milk (stirred to mix evenly)

1/4 cup Nutpods Original Creamer (optional to drizzle on top)

INSTRUCTIONS

Toss tomatoes, onion, and garlic bulbs in avocado oil and roast in the oven @ 400 degrees for about 40 minutes.

From here you have a few options on how to blend your soup.

Using a blender or food processor, blend all the ingredients from the pan with the nutritional yeast and coconut milk.

Alternatively, you could pour all the roasted veggies, coconut milk, and nutritional yeast into your soup pan. Using an Immersion blender, slowly blend all ingredients until desired consistency.

Drizzle with more coconut milk or the Nutpods Original Creamer and top with fresh chopped basil. Enjoy!
