This Paleo Zuppa Toscana is the perfect example of how comfort food can still nourish, heal, and fuel your body. Make a big batch for meal prep and cozy dinners, knowing every spoonful is working with your body, not against it.

 

Recipe: Paleo Zuppa Toscana Soup

Ingredients:

  • 1 lb Italian turkey sausage (see notes)

  • 1 large onion, chopped

  • 2 cloves garlic, minced

  • 2 cups cauliflower, chopped

  • 2 cups radishes, quartered

  • 4 cups chicken broth

  • 2 tsp arrowroot powder (to thicken)

  • 3 cups kale, coarsely chopped

  • 1/2 cup Greek yogurt (or dairy-free alternative)

  • Salt & pepper, to taste

Instructions:

  1. Prepare the turkey sausage (leave crumbled, don’t form into links or patties).

  2. Add onion and garlic to the sausage and cook until onions are translucent.

  3. Stir in cauliflower, radishes, and chicken broth. Simmer on medium-low for 20 minutes.

  4. Stir in arrowroot powder to thicken, then add kale and simmer another 10 minutes.

  5. Turn off heat, stir in Greek yogurt, and season to taste with salt and pepper.

  6. Ladle into bowls, garnish with fresh parsley, and enjoy every creamy, nourishing bite.
