Recipe: Garlic Herb Shepherd’s Pie (Dairy-Free)
Ingredients:
For the Filling:
- 1 lb lean ground turkey or beef
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup carrots, diced
- 1 cup peas (or green beans)
- 1 cup mushrooms, chopped
- 1½ tbsp tomato paste
- 1 tsp Worcestershire sauce (or coconut aminos)
- ½ tsp thyme
- ½ tsp rosemary
- 1 cup veggie or beef broth
- 1 tbsp arrowroot starch or cornstarch
- Salt & pepper to taste
For the Mashed Potato Topping:
- 4 large golden potatoes, peeled & cubed (or sweet potatoes)
- 1 cup unsweetened coconut or oat milk (NutPods works great!)
- 1 tbsp olive oil or vegan butter (like Earth Balance, red lid)
- ½ tsp garlic powder
- Salt & pepper to taste
Instructions:
- Make the Mashed Potatoes: Boil potatoes until fork-tender (~15 mins), drain, and mash with milk, oil/butter, garlic powder, salt & pepper. Set aside.
- Cook the Filling: In a pan, sauté onion & garlic in olive oil until fragrant. Add ground meat and brown. Remove meat and cook veggies in drippings. Stir in tomato paste, Worcestershire, herbs, and broth. Add meat back in and simmer. Stir in arrowroot to thicken.
- Assemble & Bake: Preheat oven to 375°F. Pour filling into baking dish or cast iron skillet. Top with mashed potatoes—leave them fluffy! Bake 20–25 mins until golden. Cool slightly, then serve.
