Healthy Shamrock Shake Recipe

Serves 1

Ingredients:

  • 1 cup coconut milk (or oat milk)
  • ½ cup dairy-free vanilla ice cream
  • ¼ tsp peppermint extract (not mint extract)
  • 1–2 tbsp maple syrup or sugar
  • ¼ cup fresh spinach
  • 5–6 fresh mint leaves
  • ½ tsp vanilla extract
  • Coconut whipped cream (for topping)

Instructions:

  1. Blend everything (except the whipped topping) until smooth and creamy.
  2. Pour into a glass and top with coconut whipped cream.
